Ingredients 

Meatballs

  • 1 lb Ground Beef
  • 1 cup Cooked Rice
  • 1 Egg
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Soup

  • 8 cups Beef Broth
  • 1 cup Carrots, diced
  • 1 cup Potatoes, diced
  • 1 cup Zucchini, diced
  • 1 Onion, chopped
  • 1 can Tomatoes, diced
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano

Instructions 

  1. In a mixing bowl, combine ground beef, cooked rice, egg, minced garlic, salt, and black pepper. Mix well and form into meatballs.
  2. In a large pot, bring beef broth to a boil. Add the meatballs carefully.
  3. Add diced carrots, potatoes, zucchini, chopped onion, diced tomatoes, cumin, and oregano to the pot. Stir well.
  4. Reduce heat and let it simmer for about 30 minutes, or until the vegetables are tender and meatballs are cooked through.
  5. Serve hot and enjoy!
