Ingredients 

Meatballs

  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 egg beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Soup

  • 8 cups beef broth
  • 1 cup carrots sliced
  • 1 cup zucchini sliced
  • 1 cup potatoes diced
  • 1 cup tomato sauce
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions 

  1. In a large bowl, mix together the ground beef, cooked rice, beaten egg, garlic powder, onion powder, salt, and black pepper. Form into small meatballs.
  2. In a large pot, bring the beef broth to a boil. Add the meatballs and reduce heat to a simmer. Cook for 10 minutes.
  3. Add the carrots, zucchini, potatoes, tomato sauce, cumin, oregano, salt, and black pepper. Simmer for another 30 minutes, or until vegetables are tender and meatballs are cooked through.
  4. Serve hot and enjoy!
