Ingredients

  • 2 cups elbow macaroni uncooked
  • 3 large eggs hard-boiled, chopped
  • 1 cup celery chopped
  • 1 cup onion chopped
  • 1 cup red bell pepper chopped
  • 2 cups mayonnaise
  • ¼ cup white vinegar
  • cup sugar
  • 2 ½ tablespoons yellow mustard
  • 1 ½ teaspoons salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon paprika

Instructions 

  1. Cook macaroni according to package directions. Drain and rinse under cold water. Set aside.
  2. In a large mixing bowl, combine mayonnaise, white vinegar, sugar, mustard, salt, and pepper. Mix well.
  3. Add the cooked macaroni, chopped eggs, celery, onion, and red bell pepper to the bowl. Stir to combine.
  4. Sprinkle paprika on top for garnish. Chill in the refrigerator for at least 1 hour before serving.
