Basque Codfish Stew Recipe
A hearty and flavorful Basque-style codfish stew.

Main Ingredients
- 500 g Codfish cut into chunks
- 1 Onion chopped
- 2 Garlic Cloves minced
- 1 Red Bell Pepper chopped
- 400 g Tomatoes diced
- 2 tablespoon Olive Oil
- 1 teaspoon Paprika
- 500 ml Fish Stock
- to taste Salt and Pepper
- 2 Bay Leaves
Heat olive oil in a large pot over medium heat.
Add chopped onion, garlic, and red bell pepper. Sauté until softened.
Add diced tomatoes and paprika. Cook for another 5 minutes.
Pour in fish stock and add bay leaves. Bring to a simmer.
Add codfish chunks. Season with salt and pepper.
Simmer for 20-25 minutes until the fish is cooked through.
Remove bay leaves before serving.
