Ingredients 

Main Ingredients

  • 3 pounds beef chuck roast
  • 2 cups beef broth
  • 1 cup red wine optional
  • 1 large onion sliced
  • 4 cloves garlic minced
  • 4 large carrots cut into chunks
  • 4 large potatoes cut into chunks
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. 1. Preheat your oven to 275°F (135°C).
  2. 2. Season the beef chuck roast with salt and pepper.
  3. 3. Heat olive oil in a Dutch oven over medium-high heat. Sear the roast on all sides until browned.
  4. 4. Remove the roast and set aside. In the same pot, add onions and garlic, cooking until softened.
  5. 5. Pour in the beef broth and red wine, scraping up any browned bits from the bottom of the pot.
  6. 6. Return the roast to the pot, add carrots and potatoes around it.
  7. 7. Cover the Dutch oven with a lid and place in the preheated oven. Cook for about 4 hours, or until the meat is tender.
  8. 8. Remove from oven and let rest for a few minutes before serving.
