Ingredients

  • 4 medium beets trimmed and scrubbed
  • 2 cups mixed greens
  • ½ cup goat cheese crumbled
  • ¼ cup walnuts toasted
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Wrap beets in aluminum foil and place on a baking sheet. Roast in the preheated oven until tender, about 45 minutes. Let cool, then peel and slice.
  3. In a large mixing bowl, combine mixed greens, sliced beets, crumbled goat cheese, and toasted walnuts.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper. Drizzle over the salad and toss to combine.
  5. Serve immediately.
