Ingredients 

Main Ingredients

  • 1 pc Zucchini sliced
  • 1 pc Red Bell Pepper sliced
  • 1 pc Yellow Squash sliced
  • 1 pc Red Onion sliced
  • 4 pcs Ciabatta Rolls halved
  • 4 tbsps Pesto Sauce
  • 4 slices Provolone Cheese

Instructions 

  1. 1. Preheat grill to medium-high heat.
  2. 2. Lightly brush vegetables with olive oil and season with salt and pepper.
  3. 3. Grill vegetables for 3-4 minutes per side until tender and slightly charred.
  4. 4. Toast ciabatta rolls on the grill for 1-2 minutes until golden brown.
  5. 5. Spread pesto sauce on each half of the ciabatta rolls.
  6. 6. Layer grilled vegetables and provolone cheese on the bottom half of each roll.
  7. 7. Top with the other half of the roll and serve immediately.
