Ingredients

  • 2 cups Rice uncooked
  • 4 pieces Chicken Breasts boneless, skinless
  • 1 tablespoon Olive Oil
  • 1 cup Chicken Broth
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 cup Frozen Peas

Instructions 

  1. 1. Heat the olive oil in a large skillet over medium heat.
  2. 2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until browned on both sides, about 5-7 minutes per side.
  3. 3. Remove the chicken from the skillet and set aside.
  4. 4. Add the rice to the skillet and stir to coat with the oil. Cook for 2-3 minutes until the rice is lightly toasted.
  5. 5. Pour in the chicken broth and bring to a boil.
  6. 6. Return the chicken to the skillet, reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is cooked and the chicken is tender.
  7. 7. Stir in the frozen peas and cook for an additional 5 minutes.
  8. 8. Serve hot and enjoy!
