Chicken and Wild Rice Soup

Main Ingredients
- 1 lb Chicken Breast cubed
- 1 cup Wild Rice
- 2 cups Carrots chopped
- 1 cup Celery chopped
- 1 cup Onion chopped
- 6 cups Chicken Broth
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 teaspoon Thyme
- 1 cup Heavy Cream
1. In a large pot, heat some oil over medium heat. Add the chicken and cook until browned.
2. Add the carrots, celery, and onion. Cook until the vegetables are tender.
3. Stir in the wild rice, chicken broth, salt, pepper, and thyme. Bring to a boil.
4. Reduce heat, cover, and simmer for about 45 minutes, or until the rice is tender.
5. Stir in the heavy cream and cook for an additional 5 minutes.
6. Serve hot and enjoy!
