Ingredients 

Dressing

  • 1 clove Garlic minced
  • 2 pieces Anchovy fillets mashed
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoon Lemon juice freshly squeezed
  • ½ cup Olive oil
  • ¼ cup Grated Parmesan cheese

Salad

  • 1 head Romaine lettuce chopped
  • 1 cup Croutons
  • ¼ cup Grated Parmesan cheese

Instructions 

  1. In a mixing bowl, whisk together garlic, anchovy fillets, Dijon mustard, Worcestershire sauce, and lemon juice.
  2. Slowly whisk in olive oil until dressing is emulsified.
  3. Stir in grated Parmesan cheese. Season with salt and pepper to taste.
  4. In a large bowl, toss chopped romaine lettuce with dressing, croutons, and additional grated Parmesan cheese.
  5. Serve immediately.
