  • 1 cup Chopped Vegetables (bell peppers, spinach, onions)
  • ¼ cup Shredded Cheese
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin.
  2. In a mixing bowl, whisk together egg whites, salt, and pepper.
  3. Stir in chopped vegetables and shredded cheese.
  4. Pour the mixture evenly into the muffin tin cups.
  5. Bake for 20 minutes, or until the egg whites are set.
  6. Let cool slightly before removing from the muffin tin. Serve warm.
