  • 1 large Eggplant sliced into rounds
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 4 slices Bread toasted
  • 1 cup Lettuce shredded
  • 1 medium Tomato sliced

Instructions 

  1. 1. Preheat grill pan over medium heat.
  2. 2. Brush eggplant slices with olive oil and season with salt and pepper.
  3. 3. Grill eggplant slices for 3-4 minutes on each side until tender.
  4. 4. Assemble sandwiches with grilled eggplant, lettuce, and tomato between toasted bread slices.
