Ingredients 

Main Ingredients

  • 4 ears corn husked
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ½ cup cotija cheese crumbled
  • 1 tablespoon lime juice freshly squeezed
  • ½ teaspoon chili powder
  • ¼ cup cilantro chopped
  • 1 pinch salt to taste
  • 1 pinch pepper to taste

Instructions 

  1. Preheat the grill to medium-high heat.
  2. Grill the corn for about 10 minutes, turning occasionally, until charred and cooked through.
  3. Remove the corn from the grill and let it cool slightly. Cut the kernels off the cob and place them in a mixing bowl.
  4. In a separate bowl, mix together the mayonnaise, sour cream, cotija cheese, lime juice, and chili powder.
  5. Add the dressing to the corn and toss to combine. Stir in the chopped cilantro and season with salt and pepper to taste.
  6. Serve immediately or chill in the fridge for later.
