Ingredients 

Main Ingredients

  • 4 large flour tortillas
  • 6 eggs
  • ½ cup shredded cheese
  • 1 cup cooked sausage or bacon, crumbled
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • to taste salt and pepper

Instructions 

  1. 1. In a skillet, cook the sausage or bacon until browned. Remove and set aside.
  2. 2. In the same skillet, sauté the bell peppers and onions until softened.
  3. 3. Beat the eggs in a bowl, then pour into the skillet. Scramble until cooked through.
  4. 4. Add the cooked sausage or bacon back into the skillet, mix well.
  5. 5. Lay out the tortillas and divide the egg mixture among them. Sprinkle with cheese.
  6. 6. Roll up each tortilla, folding in the sides as you go.
  7. 7. Wrap each burrito in foil and place in freezer bags. Freeze.
  8. 8. To reheat, remove foil, wrap in a paper towel, and microwave for 2-3 minutes.
