Main Ingredients
- 2 lbs beef stew meat cut into chunks
- 2 tablespoon olive oil
- 1 large onion chopped
- 3 cloves garlic minced
- 2 cups beef broth
- 1 cup red wine
- 1 can diced tomatoes
- 2 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 2 bay leaves
- to taste salt and pepper
Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
Add chopped onion and garlic to the pot. Cook until onion is translucent.
Pour in beef broth, red wine, diced tomatoes, and tomato paste. Stir well.
Add oregano, thyme, bay leaves, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for about 2 hours or until beef is tender.
Remove bay leaves before serving. Enjoy!
