Ingredients

  • 1 lb Ground Beef
  • 2 cups Carrots, diced
  • 2 cups Potatoes, diced
  • 1 cup Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef Broth
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Dried Thyme

Instructions 

  1. 1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. 3. Stir in the diced carrots and potatoes. Cook for about 5 minutes.
  4. 4. Pour in the beef broth and add the salt, pepper, and thyme. Bring to a boil.
  5. 5. Reduce the heat to low and let it simmer for about 30 minutes, or until the vegetables are tender.
  6. 6. Adjust seasoning if necessary and serve hot.
