Ingredients 

Main Ingredients

  • 1 lb ground beef
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups diced carrots
  • 2 cups diced potatoes
  • 1 cup corn kernels
  • 1 cup green beans, chopped
  • 6 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. 3. Stir in the diced carrots, potatoes, corn, and green beans. Cook for a few minutes.
  4. 4. Pour in the beef broth and diced tomatoes. Add the dried basil and oregano. Season with salt and pepper to taste.
  5. 5. Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the vegetables are tender.
  6. 6. Serve hot and enjoy!
