Ingredients

  • 3 lbs Oxtail
  • 2 tablespoon Vegetable Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 sprigs Thyme
  • 2 cups Beef Broth
  • 1 tablespoon Brown Sugar
  • 1 teaspoon Allspice
  • 2 tablespoon Soy Sauce
  • 2 tablespoon Ketchup
  • 1 can Butter Beans drained and rinsed
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat the vegetable oil in a large pot over medium-high heat. Add the oxtail and brown on all sides.
  2. 2. Add the chopped onion, minced garlic, and thyme to the pot. Cook until the onion is soft.
  3. 3. Pour in the beef broth, brown sugar, allspice, soy sauce, and ketchup. Stir well to combine.
  4. 4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 3 hours, or until the oxtail is tender.
  5. 5. Add the butter beans to the pot and cook for an additional 15 minutes. Season with salt and pepper to taste.
