Ingredients

  • 1 lb chicken breast, diced
  • 1 lb andouille sausage, sliced
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 1 can diced tomatoes 14.5 oz
  • 2 cups chicken broth
  • 1.5 cups long grain rice
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 2 pcs bay leaves
  • 1 lb shrimp, peeled and deveined

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add chicken and sausage, cook until browned.
  2. 2. Add onions, bell peppers, celery, and garlic. Cook until vegetables are tender.
  3. 3. Stir in diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, and bay leaves. Bring to a boil.
  4. 4. Reduce heat, cover, and simmer for 20-25 minutes, until rice is cooked.
  5. 5. Add shrimp and cook for another 5 minutes, until shrimp is pink and cooked through.
  6. 6. Remove bay leaves and serve hot.
