Instructions
1. Heat the vegetable oil in a wok over medium-high heat.
2. Add the garlic and onion, and stir-fry until fragrant.
3. Push the garlic and onion to the side of the wok and pour in the beaten eggs. Scramble the eggs until fully cooked.
4. Add the mixed vegetables and stir-fry for a few minutes until they are tender.
5. Add the cooked rice and soy sauce. Stir-fry everything together until well combined and heated through.
6. Season with salt and pepper to taste. Serve hot.
