Ingredients 

Soup Base

  • 2 tablespoon Butter
  • 1 cup Onion, chopped
  • 2 cups Potatoes, diced
  • 4 cups Chicken Broth
  • 2 cups Heavy Cream

Dumplings

  • 2 cups All-purpose Flour
  • 1 teaspoon Salt
  • 2 large Eggs
  • ½ cup Milk

Instructions 

  1. 1. In a large pot, melt the butter over medium heat. Add the chopped onion and cook until translucent.
  2. 2. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. 3. While the soup is simmering, prepare the dumplings. In a mixing bowl, combine flour, salt, eggs, and milk. Mix until a dough forms.
  4. 4. Drop spoonfuls of the dough into the simmering soup. Cook until the dumplings float to the top and are cooked through.
  5. 5. Stir in the heavy cream and cook for a few more minutes until heated through. Serve hot.
