Lemon Chicken Orzo Soup

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots carrots, sliced
- 2 celery stalks celery, sliced
- 8 cups chicken broth
- 1 cup orzo
- 2 cups cooked chicken, shredded
- 1 lemon, juiced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup fresh parsley, chopped
Heat olive oil in a large pot over medium heat.
Add diced onion, minced garlic, sliced carrots, and celery. Cook until softened.
Pour in chicken broth and bring to a boil.
Add orzo and cook until tender, about 8-10 minutes.
Stir in shredded chicken, lemon juice, dried oregano, salt, and black pepper. Simmer for another 5 minutes.
Garnish with fresh parsley before serving.
