Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots carrots, sliced
  • 2 celery stalks celery, sliced
  • 8 cups chicken broth
  • 1 cup orzo
  • 2 cups cooked chicken, shredded
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, minced garlic, sliced carrots, and celery. Cook until softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add orzo and cook until tender, about 8-10 minutes.
  5. Stir in shredded chicken, lemon juice, dried oregano, salt, and black pepper. Simmer for another 5 minutes.
  6. Garnish with fresh parsley before serving.
