Main Ingredients
- 1 cup Lentils rinsed and drained
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 2 medium Carrots chopped
- 2 stalks Celery chopped
- 1 can Diced Tomatoes 14.5 oz can
- 6 cups Vegetable Broth
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black Pepper to taste
- 2 tablespoon Olive Oil
Heat olive oil in a large pot over medium heat.
Add onions, garlic, carrots, and celery. Cook until softened, about 5-7 minutes.
Stir in cumin and paprika, cooking for another minute.
Add lentils, diced tomatoes, and vegetable broth. Bring to a boil.
Reduce heat and let simmer for 30-35 minutes, until lentils are tender.
Season with salt and pepper to taste. Serve hot.
