Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed and drained
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 medium Carrots chopped
  • 2 stalks Celery chopped
  • 1 can Diced Tomatoes 14.5 oz can
  • 6 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste
  • 2 tablespoon Olive Oil

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, garlic, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in cumin and paprika, cooking for another minute.
  4. Add lentils, diced tomatoes, and vegetable broth. Bring to a boil.
  5. Reduce heat and let simmer for 30-35 minutes, until lentils are tender.
  6. Season with salt and pepper to taste. Serve hot.
