Manhattan Clam Chowder Recipe

- 2 tablespoon Olive Oil
- 1 cup Onion, chopped
- 1 cup Celery, chopped
- 2 cloves Garlic, minced
- 1 cup Carrots, diced
- 2 cups Potatoes, diced
- 1 can Diced Tomatoes (14.5 oz)
- 2 cups Clam Juice
- 2 cans Clams, chopped (6.5 oz each)
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ¼ cup Fresh Parsley, chopped
Heat olive oil in a large pot over medium heat.
Add onion, celery, and garlic. Cook until softened, about 5 minutes.
Add carrots and potatoes. Cook for another 5 minutes.
Stir in diced tomatoes, clam juice, thyme, oregano, salt, and pepper. Bring to a boil.
Reduce heat and simmer for 30 minutes, or until vegetables are tender.
Add clams and cook for an additional 5 minutes.
Garnish with fresh parsley before serving.
