Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 1 cup Celery, chopped
  • 2 cloves Garlic, minced
  • 1 cup Carrots, diced
  • 2 cups Potatoes, diced
  • 1 can Diced Tomatoes (14.5 oz)
  • 2 cups Clam Juice
  • 2 cans Clams, chopped (6.5 oz each)
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Fresh Parsley, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, celery, and garlic. Cook until softened, about 5 minutes.
  3. Add carrots and potatoes. Cook for another 5 minutes.
  4. Stir in diced tomatoes, clam juice, thyme, oregano, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes, or until vegetables are tender.
  6. Add clams and cook for an additional 5 minutes.
  7. Garnish with fresh parsley before serving.
