  • 1 tablespoon lemon juice

Instructions 

  1. 1. Pour the heavy cream into a heavy-bottomed saucepan and heat over medium heat until it reaches 190°F (88°C).
  2. 2. Remove from heat and stir in the lemon juice. Let the mixture sit for 5-10 minutes until it thickens.
  3. 3. Line a strainer with cheesecloth and place it over a bowl. Pour the mixture into the strainer and let it drain for 1-2 hours.
  4. 4. Transfer the mascarpone cheese to a container and refrigerate until ready to use.
