Ingredients 

Matzo Balls

  • 1 cup Matzo meal
  • 4 Eggs beaten
  • ¼ cup Chicken fat or oil melted
  • ¼ cup Water
  • 1 teaspoon Salt

Soup

  • 8 cups Chicken broth
  • 2 Carrots sliced
  • 2 Celery stalks sliced
  • 1 Onion chopped
  • to taste Salt and pepper

Instructions 

  1. In a mixing bowl, combine matzo meal, beaten eggs, melted chicken fat or oil, water, and salt. Mix well and refrigerate for 30 minutes.
  2. Form the mixture into balls about the size of a walnut.
  3. In a large pot, bring chicken broth to a boil. Add carrots, celery, and onion. Reduce heat and simmer for 10 minutes.
  4. Gently drop the matzo balls into the simmering broth. Cover and cook for 30-40 minutes, until the matzo balls are cooked through.
  5. Season with salt and pepper to taste. Serve hot.
