Main Ingredients
- 2 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 Carrots, diced
- 2 stalks Celery, diced
- 1 can Diced Tomatoes
- 4 cups Vegetable Broth
- 1 can Cannellini Beans, drained and rinsed
- 1 Zucchini, diced
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- to taste Salt and Pepper
- 2 cups Spinach, roughly chopped
- ½ cup Pasta (small shapes like ditalini)
1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
2. Add carrots and celery, cook for another 5 minutes.
3. Stir in diced tomatoes, vegetable broth, and beans. Bring to a boil.
4. Add zucchini, oregano, basil, salt, and pepper. Simmer for 20 minutes.
5. Add pasta and cook until tender. Stir in spinach just before serving.
