Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Carrots, diced
  • 2 stalks Celery, diced
  • 1 can Diced Tomatoes
  • 4 cups Vegetable Broth
  • 1 can Cannellini Beans, drained and rinsed
  • 1 Zucchini, diced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • to taste Salt and Pepper
  • 2 cups Spinach, roughly chopped
  • ½ cup Pasta (small shapes like ditalini)

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  2. 2. Add carrots and celery, cook for another 5 minutes.
  3. 3. Stir in diced tomatoes, vegetable broth, and beans. Bring to a boil.
  4. 4. Add zucchini, oregano, basil, salt, and pepper. Simmer for 20 minutes.
  5. 5. Add pasta and cook until tender. Stir in spinach just before serving.
