Ingredients 

Main Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 3 eggs large
  • ¾ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups grated carrots
  • 1 cup grated apple
  • ½ cup raisins
  • ½ cup shredded coconut
  • ½ cup chopped walnuts

Instructions 

  1. Preheat oven to 350°F (175°C). Grease muffin tin or line with paper liners.
  2. In a large bowl, mix flour, sugar, baking soda, cinnamon, and salt.
  3. In another bowl, beat eggs, oil, and vanilla. Stir into dry ingredients just until moistened.
  4. Fold in carrots, apple, raisins, coconut, and walnuts.
  5. Fill muffin cups two-thirds full. Bake for 25 minutes or until a toothpick comes out clean.
  6. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
