Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground paprika
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon cayenne pepper
  • 2 cans chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • ½ cup dried apricots, chopped
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  2. Add minced garlic, ground cumin, ground coriander, ground paprika, ground cinnamon, and cayenne pepper. Cook for another 2 minutes.
  3. Add chickpeas, diced tomatoes, vegetable broth, and dried apricots. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
