Ingredients 

Main Ingredients

  • 2 tablespoon Butter
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 1 tablespoon Curry Powder
  • 1 cup Diced Carrots
  • 1 cup Diced Celery
  • 1 cup Diced Apples
  • 1 cup Red Lentils
  • 4 cups Chicken Broth
  • 1 cup Coconut Milk
  • to taste Salt and Pepper

Instructions 

  1. Melt butter in a large pot over medium heat. Add onions and garlic, cook until softened.
  2. Stir in curry powder, cook for 1 minute.
  3. Add carrots, celery, and apples. Cook for 5 minutes.
  4. Add lentils and chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Stir in coconut milk, season with salt and pepper. Simmer for another 5 minutes.
  6. Blend the soup until smooth, if desired. Serve hot.
