Main Ingredients
- 2 tablespoon Butter
- 1 cup Chopped Onion
- 2 cloves Garlic, minced
- 1 tablespoon Curry Powder
- 1 cup Diced Carrots
- 1 cup Diced Celery
- 1 cup Diced Apples
- 1 cup Red Lentils
- 4 cups Chicken Broth
- 1 cup Coconut Milk
- to taste Salt and Pepper
Melt butter in a large pot over medium heat. Add onions and garlic, cook until softened.
Stir in curry powder, cook for 1 minute.
Add carrots, celery, and apples. Cook for 5 minutes.
Add lentils and chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
Stir in coconut milk, season with salt and pepper. Simmer for another 5 minutes.
Blend the soup until smooth, if desired. Serve hot.
