Ingredients 

Base Layer

  • ½ cup unsalted butter melted
  • ¼ cup granulated sugar
  • 5 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1 egg beaten
  • 2 cups graham cracker crumbs
  • 1 cup sweetened shredded coconut

Custard Layer

  • ½ cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tablespoons vanilla custard powder
  • 3 tablespoons milk

Top Layer

  • 4 ounces semi-sweet chocolate chopped
  • 2 tablespoons unsalted butter

Instructions 

  1. 1. In a saucepan, melt butter, sugar, and cocoa powder over low heat. Add vanilla and beaten egg, stirring until thickened. Remove from heat.
  2. 2. Stir in graham cracker crumbs and shredded coconut. Press mixture firmly into an ungreased 8x8 inch baking pan.
  3. 3. For the custard layer, cream together butter, powdered sugar, custard powder, and milk until light and fluffy. Spread over the base layer.
  4. 4. Melt chocolate and butter together in a double boiler or microwave. Spread over the custard layer. Chill in the refrigerator until set. Cut into bars and serve.
