Ingredients

  • 2 lbs Pork shoulder, cubed
  • 1 tablespoon Vegetable oil
  • 1 Large onion, chopped
  • 4 cloves Garlic, minced
  • 1 cup Roasted green chiles, chopped
  • 4 cups Chicken broth
  • 3 Large potatoes, peeled and cubed
  • 1 teaspoon Salt
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 cup Fresh cilantro, chopped for garnish

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the pork and cook until browned on all sides.
  2. Add the onion and garlic to the pot and cook until softened.
  3. Stir in the green chiles, chicken broth, potatoes, salt, cumin, and oregano. Bring to a boil.
  4. Reduce heat to low and simmer for about 1.5 hours, or until the pork and potatoes are tender.
  5. Garnish with fresh cilantro before serving.
