Ingredients 

Main Ingredients

  • 1 cup Rolled oats
  • 1 cup Milk
  • 1 cup Whole wheat flour
  • ½ cup Brown sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 Egg beaten
  • ¼ cup Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
  2. In a bowl, combine the oats and milk. Let it sit for 10 minutes.
  3. In another bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt.
  4. Add the egg, oil, and vanilla to the oat mixture. Mix well.
  5. Stir the wet ingredients into the dry ingredients until just combined.
  6. Fill the muffin cups about ⅔ full with the batter.
  7. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
