Panzanella Salad Recipe
A refreshing and simple Italian bread salad made with stale bread, tomatoes, cucumber, red onion, and basil.

- 4 cups stale bread, cubed
- 2 large tomatoes, chopped
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ¼ cup fresh basil, chopped
- ¼ cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
In a large bowl, combine the bread, tomatoes, cucumber, red onion, and basil.
Drizzle with olive oil and red wine vinegar.
Season with salt and pepper.
Toss everything together until well mixed.
Let it sit for about 10 minutes before serving to allow the bread to soak up the flavors.
