Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 carrots Carrots, diced
  • 2 stalks Celery, diced
  • 1 can Diced Tomatoes (14.5 oz)
  • 4 cups Chicken Broth
  • 1 can Cannellini Beans (15 oz, drained and rinsed)
  • 1 cup Ditalini Pasta
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • to taste Salt and Pepper
  • ¼ cup Parmesan Cheese, grated
  • 2 tablespoon Fresh Parsley, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Cook until tender.
  3. Stir in diced tomatoes, chicken broth, beans, and pasta.
  4. Add oregano, basil, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes, until pasta is cooked.
  6. Serve hot, topped with Parmesan cheese and parsley.
