Ingredients 

Crust

  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter cold and cubed
  • 1 teaspoon salt
  • 6-8 tablespoon ice water

Filling

  • 5 cups sliced peaches peeled
  • 1 cup granulated sugar
  • ¼ cup brown sugar
  • ¼ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon unsalted butter cut into small pieces

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine flour and salt for the crust. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, and refrigerate for at least 30 minutes.
  4. Roll out one disc of dough on a floured surface and fit it into a 9-inch pie dish. Trim the edges.
  5. In a large bowl, combine sliced peaches, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Pour the filling into the pie crust and dot with butter.
  6. Roll out the second disc of dough and place it over the filling. Trim, seal, and flute the edges. Cut slits in the top crust to allow steam to escape.
  7. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. Cool on a wire rack before serving.
