Main Ingredients
- 1 cup Pearl couscous
- 1 cup Cherry tomatoes, halved
- 1 Cucumber, diced
- ¼ cup Red onion, finely chopped
- ¼ cup Feta cheese, crumbled
- 2 tablespoon Olive oil
- 1 tablespoon Lemon juice
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- ¼ cup Fresh parsley, chopped
1. Cook the pearl couscous according to the package instructions. Drain and set aside to cool.
2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, and feta cheese.
3. Add the cooled couscous to the bowl and mix well.
4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
5. Pour the dressing over the salad and toss to coat evenly.
6. Garnish with fresh parsley before serving.
