Ingredients 

Custard

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup sugar
  • 1 tablespoon all-purpose flour
  • 6 egg yolks
  • 1 teaspoon vanilla extract

Pastry

  • 1 package puff pastry thawed

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a saucepan, combine heavy cream, milk, sugar, and flour. Cook over medium heat, stirring constantly until mixture thickens and comes to a boil. Remove from heat.
  3. In a bowl, whisk egg yolks and vanilla extract. Gradually add the hot milk mixture, whisking constantly. Return to saucepan and cook over low heat until thickened. Remove from heat and let cool slightly.
  4. Roll out puff pastry on a lightly floured surface. Cut into 12 equal squares and fit into muffin tin cups, pressing gently to form a shell.
  5. Fill each pastry shell with the custard mixture. Bake for 20-25 minutes, or until the tops are golden and the pastry is crisp.
  6. Allow to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
