Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup parsley finely chopped
  • ½ cup mint finely chopped
  • 1 cup tomatoes diced
  • ½ cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup lemon juice freshly squeezed
  • 2 tablespoons olive oil
  • to taste salt
  • to taste black pepper

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it cool.
  3. 3. In a large mixing bowl, combine the cooled quinoa, parsley, mint, tomatoes, cucumber, and red onion.
  4. 4. Add the lemon juice, olive oil, salt, and black pepper. Toss to combine.
  5. 5. Serve chilled or at room temperature.
