  • 2 pounds red-skinned potatoes cut into chunks
  • ½ cup mayonnaise
  • ¼ cup dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 stalks celery chopped
  • ¼ cup red onion finely chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoon fresh dill chopped

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine mayonnaise, dijon mustard, apple cider vinegar, salt, and pepper.
  3. 3. Add the cooled potatoes, celery, red onion, and fresh dill to the bowl. Toss to coat evenly.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
