Ingredients

  • 1 whole Duck about 5-6 pounds
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground
  • 2 cloves Garlic minced
  • 1 tablespoon Fresh Thyme chopped

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the duck and pat it dry with paper towels.
  3. Rub the duck with olive oil, salt, pepper, garlic, and thyme.
  4. Place the duck in a roasting pan, breast side up.
  5. Roast the duck for about 2 hours, basting occasionally with the pan juices.
  6. Check the internal temperature with a meat thermometer. It should read 165°F (74°C).
  7. Let the duck rest for 15 minutes before carving.
