Ingredients

  • 2 racks lamb frenched
  • 2 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 tablespoon rosemary chopped
  • 1 teaspoon thyme chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions 

  1. 1. Preheat your oven to 450°F (230°C).
  2. 2. In a small bowl, mix together olive oil, garlic, rosemary, thyme, salt, and black pepper.
  3. 3. Rub the mixture all over the lamb racks.
  4. 4. Place the lamb racks on a baking sheet, bone side down.
  5. 5. Roast in the preheated oven for 25 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  6. 6. Let the lamb rest for 10 minutes before slicing and serving.
