Ingredients

  • 1 cup Crab Meat preferably fresh
  • 4 tablespoon Butter
  • 1 cup Heavy Cream
  • 1 cup Milk
  • 1 cup Fish Stock
  • 1 tablespoon Flour
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 2 tablespoon Sherry

Instructions 

  1. Melt the butter in a large pot over medium heat.
  2. Add the flour and whisk continuously for about 2 minutes.
  3. Slowly add the milk, cream, and fish stock, whisking constantly to avoid lumps.
  4. Bring the mixture to a simmer and cook for about 10 minutes, stirring occasionally.
  5. Add the crab meat, salt, and black pepper. Simmer for another 10 minutes.
  6. Stir in the sherry and cook for an additional 5 minutes.
  7. Serve hot, garnished with a sprinkle of fresh parsley if desired.
