Ingredients

  • 3 pounds Chuck Roast
  • 1 large Onion sliced
  • 4 cloves Garlic minced
  • 4 cups Beef Broth
  • 1 pound Carrots cut into chunks
  • 1 pound Potatoes cut into chunks
  • 2 tablespoons Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat olive oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until browned.
  2. 2. Place the roast in the slow cooker. Add the sliced onion, minced garlic, carrots, and potatoes.
  3. 3. Pour the beef broth over the roast and vegetables. Season with salt and pepper to taste.
  4. 4. Cover and cook on low for 8 hours, or until the meat is tender and easily shredded.
  5. 5. Serve hot and enjoy!
