- 4 fillets Catfish fresh
- 1 cup Cornmeal
- ½ cup All-purpose flour
- 1 teaspoon Salt
- 1 teaspoon Black pepper ground
- 1 teaspoon Paprika
- 1 cup Buttermilk
- 1 quart Vegetable oil for frying
1. Heat the oil in a deep fryer to 350°F (175°C).
2. In a bowl, mix cornmeal, flour, salt, pepper, and paprika.
3. Dip catfish fillets in buttermilk, then coat with the cornmeal mixture.
4. Fry the fillets in the hot oil until golden brown, about 3-4 minutes per side.
5. Drain on paper towels and serve hot.
