  • 4 medium Potatoes peeled and thinly sliced
  • 1 medium Onion thinly sliced
  • 6 large Eggs
  • 0.5 cup Olive oil
  • to taste Salt

Instructions 

  1. Heat olive oil in a frying pan over medium heat.
  2. Add potatoes and onions, cook until soft and golden.
  3. In a mixing bowl, beat the eggs with salt and pepper.
  4. Pour the egg mixture over the potatoes and onions in the pan.
  5. Cook on low heat until the eggs are set.
  6. Flip the omelet using a plate and cook the other side until golden.
