Ingredients

  • 2 cups Spinach fresh, chopped
  • 2 medium Potatoes peeled and diced
  • 6 Eggs beaten
  • ½ cup Milk
  • 1 cup Cheddar Cheese shredded
  • 1 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add diced potatoes and cook until tender, about 10 minutes.
  3. Add chopped spinach to the skillet and cook until wilted, about 2 minutes.
  4. In a bowl, whisk together eggs, milk, salt, and pepper.
  5. Pour the egg mixture over the vegetables in the skillet. Sprinkle with shredded cheddar cheese.
  6. Transfer the skillet to the preheated oven and bake until the frittata is set, about 20 minutes.
  7. Let cool slightly before slicing and serving.
