Ingredients 

Main Ingredients

  • 2 cups dried split peas
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots carrots, chopped
  • 2 stalks celery, chopped
  • 8 cups chicken broth
  • 1 teaspoon thyme dried
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Instructions 

  1. 1. Rinse the split peas under cold water.
  2. 2. In a large pot, sauté the onion and garlic until softened.
  3. 3. Add the carrots, celery, and sauté for another 5 minutes.
  4. 4. Add the split peas, ham hock (if using), chicken broth, thyme, salt, and pepper.
  5. 5. Bring to a boil, then reduce heat and simmer for about 90 minutes, until peas are tender.
  6. 6. Remove ham hock, shred the meat, and return to the pot. Adjust seasoning if needed.
