Instructions
1. Rinse the split peas under cold water.
2. In a large pot, sauté the onion and garlic until softened.
3. Add the carrots, celery, and sauté for another 5 minutes.
4. Add the split peas, ham hock (if using), chicken broth, thyme, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for about 90 minutes, until peas are tender.
6. Remove ham hock, shred the meat, and return to the pot. Adjust seasoning if needed.
