Summer Corn Salad Recipe
A refreshing and easy-to-make summer corn salad.

Main Ingredients
- 4 cups corn kernels fresh or frozen
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- 0.25 cup red onion finely chopped
- 2 tablespoons olive oil
- 2 tablespoons lime juice freshly squeezed
- 0.25 cup cilantro chopped
- 1 teaspoon salt to taste
- 0.5 teaspoon black pepper to taste
In a large mixing bowl, combine the corn, cherry tomatoes, cucumber, and red onion.
Drizzle with olive oil and lime juice. Toss to coat.
Add chopped cilantro, salt, and black pepper. Mix well.
Serve immediately or refrigerate for later.
