Ingredients 

Main Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 2 large russet potatoes peeled and cubed
  • ½ cup mayonnaise
  • ¼ cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 2 tablespoon apple cider vinegar
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • ¼ cup chopped green onions
  • ¼ cup chopped celery

Instructions 

  1. 1. Boil the sweet potatoes and russet potatoes in a large pot until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, salt, and black pepper.
  3. 3. Add the cooled potatoes, green onions, and celery to the bowl. Mix well to combine.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
